Tomato sauce:

2 cups onion, diced

2 cloves garlic, minced

1 / 4 cup olive oil

1 (35 oz) tomatoes, drained and chopped

Melt the butter in a saucepan, add flour and cook roux over low heat, stirring for 3 minutes. Remove from heat and slowly add the milk while beating until smooth. Add nutmeg, white pepper and salt to taste, simmer for 10 minutes, or until the sauce boils and thickens and cool.Mix eggs and ricotta cheese, add in the cooled cream and stir well.

Eggplant:

3-4 aubergines

Peel the eggplant lengthwise removing decorative strips of Peel, in 1/2-inch intervals around each eggplant. Cut the eggplant into slices 1/2-inch.

Sprinkle each slice with salt and keep the slices in a colander for 30 minutes to evacuate. Dry the slices and place on a lightly oiled baking sheet. Brush tops of eggplant with oil, to grill 3 to 5 minutes until golden. Transfer to paper towels.
