Grill Mates aren't likely to set world on fire

I found the 5 Pepper Blend anything but fiery, despite containing ancho, chipotle, cayenne, black pepper and roasted chili peppers. The Cowboy Rub contains peppers (roasted chili peppers, crushed red pepper flakes and cracked peppers), garlic, smoke, sugar and some coffee, but also underwhelmed. Perhaps it's for cowboys who ride ponies rather than stallions.

The marinades are a more flavorful story. They have both a peppery and salty kick. The salty taste is easy to explain, as a teaspoon of either dry mix has 240 milligrams sodium, with each envelope of mix purported to marinate two pounds of meat, chicken or fish. That constitutes nine servings for the Carolina Country and 12 servings of the Backyard Brew. The flavors are decent, especially the Backyard Brew when using beer as the liquid.

To make these flavors come through, I suggest using half the dry mix, or double the liquid for twice as much meat.

I could taste the beer in the Backyard Brew, as well as salt and lots of herbs, but the overall flavor was only OK.

I actually preferred the two, more-traditional new Grill Mates products. The Carolina Country Marinade creates a mustard paste that anyone who likes mustard should really like. In a side-by-side taste test on shrimp, the Fiery 5 Pepper Blend blew away Old Bay powder, my usual go-to red pepper seasoning. The 5 Pepper Blend's dried flakes were much more complex and interesting and also packed more firepower.
