Tis the season for cooking with apples
Willis likes to eat to get them directly from the tree. But he also likes French fries and wasted.
For over three decades, Willis, owner of two restaurants in Tulsa Freddie hamburgers, and her family sold cinnamon rolls and other food to the Tulsa State Fair.
Gradually, apple fritters, apple dumplings and fried potatoes were added to the list of goodies they offer.
"When it's time for the fair, it's time for apples of choice. It is as good as it gets for Apple right now, "said Willis.
This year he has at least 6400 of cooking apples during the fair.While Willis knows a thing or two about apples.
Willis said his father, James Willis, was inspired to make the donuts apple pulp which has been cut at the end of a spiral of cinnamon rolls.
"Dad knew it was a waste and came up with apple fritters," said Willis.
Five years ago, Willis went to the fair in the state of Minnesota in St. Paul, tried some fried apple and decided he needed to share this treat with Tulsans. He chose the Big Apple Gala in Washington for dessert.
The apples are peeled and run through a French fry cutter.They are battered and fried until crisp. Apple sticks are sprinkled with brown sugar and served with whipped cream and caramel. Some people add a scoop of vanilla ice cream.
Three years ago, Willis decided to start offering apple dumplings. The apples are cut into a spiral, seasoned with sugar, cinnamon and butter, wrapped in dough and baked. Just describing the pellets make his mouth water, Willis said.
"I like apples. We have friends in Minnesota who grow apples in the yard. It's amazing to pick something out of the tree that God made, wipe on your shirt and eat it, "said Willis."It is natural, God-given candy.

Ooo the braid apple look so good! There was a tea room here, who have served full meals. They had sweet potato fries and dipping sauce was amazing. He was a sweet, creamy sauce. They have since closed, and I can not find this recipe anywhere. Sigh.
