Impressive ice cream treats
COCONUT MACAROON AND MANGO BOMBE Makes 4 servings.
1 C coconut macaroons, finely chopped
1 pint coconut sorbet or ice cream, softened
2⁄3 cup diced mango (from 1 large ripe mango), more for garnish
1 pint mango sorbet, softened
In a 21⁄2-quart bowl, mix the macaroon pieces with the coconut sorbet or ice cream until well combined; spread the mixture around the bottom and sides in an even layer. If the ice cream is too soft, freeze for 15 minutes and try again. Once you've got an even layer, place the bowl in the freezer for 2 hours until frozen.
Spread the diced mango all over the macaroon-studded ice cream or sorbet and freeze for 30 minutes. Fill with mango sorbet, smoothing the top, and freeze for 2 hours.
Remove and set it in a bowl of warm water for 1 to 2 minutes to loosen. Place a plate over the bowl, invert and unmold.
MALTED MILK ICE CREAM BONBONS
Makes 25 to 30 ice cream balls.
1 C chocolate malted milk balls
1 C malted milk powder
1⁄2 pint chocolate, coffee, ginger or other ice cream
Freeze the malted milk balls for 30 minutes. Pulse them in a food processor, or crush them in a sealed plastic bag to make pieces the size of rice grains.
Place the malted milk powder into a shallow bowl. Scoop out a ball of ice cream and roll it in the malted milk powder until well coated, then roll it in the crumbs made from the malted milk balls. Immediately put on a plate in the freezer and repeat with remaining ingredients. Firm them in the freezer for at least 20 minutes before serving.
